docs: apply formatting pipeline to about-hyperswitch docs

Applied the documentation formatting pipeline to 34 markdown files in the about-hyperswitch directory.

Changes Made

• Frontmatter: Added/updated YAML frontmatter with descriptive metadata for all files
• Formatting: Fixed typos, spacing issues, and converted GitBook hint blocks to blockquotes
• Brand Naming: Applied Juspay Hyperswitch branding to first mentions in 33 files
• Product Stats: Updated connector count (60+ to 300+) and payment methods (150+ to 300+)
• Integrity: Verified all 33 files pass integrity checks - no content loss
