Remove SHACL shapes from this repository

Add script to download or reference to SHACL shapes hosted under mobilityDCAT-AP. Do not copy here to avoid inconsistencies

Thanks for raising this, @marioscrock . Agreed — copying shapes here risks inconsistencies long-term.

For now I still need the shapes locally for testing since they haven't been merged into the main mobilityDCAT-AP repo yet. I'll keep them here temporarily and switch to a download script / reference once the merge is done. I'll update this issue at that point.

@marioscrock Done for releases/1.1.0 as well — examples and Docker setup removed, only the SHACL shapes file is kept:
